Caviar producer and trout breeder in Périgord Noir
Founded in 1997, Caviar Perle Noire is a key player in the production of caviar and trout eggs in New Aquitaine, precisely in the picturesque Périgord Noir.
Nestled near the Grottes des Combarelles, the Château de Commarque and the Château de Puymartin, our aquaculture farm enjoys optimal breeding conditions, in the heart of a region rich in history and flavors.
Breeding: exceptional know-how
The Perle Noire Caviar farm located in the Natura 2000 Zone is fed by the Beune stream, coming from a spring. Our sturgeons, Acipenser baerii and Acipencer Gueldenstaedtiii, develop in optimal conditions, reaching maturity between 10 and 12 years old.
Our Rainbow trout are raised in water of exceptional quality, with low density and a rigorously selected diet, which gives their flesh an incomparable taste.
Caviar production: excellence serving the taste buds
Making caviar at Caviar Perle Noire is a delicate process. The eggs, carefully extracted, are carefully sorted according to their size, color and firmness. Following a rigorous protocol, the eggs are sifted, washed, lightly salted, then packaged in traditional “Malossol” maturing boxes of 1 or 1.8kg.
These boxes are then kept in a cold room at -2°C, for refining supervised by Anthony, Master Refiner. After this meticulous process, the caviar is packaged in small vacuum-packed cans of different weights, ready to be tasted by connoisseurs.
What happens to the fish: an artisanal transformation
The rapid slaughter of fish, carried out using the ancestral Japanese IKEJIME technique, guarantees exceptional flesh quality and long shelf life. From cutting to vacuum-packing to smoking in beech wood, the Caviar Perle Noire team treats the flesh of trout and sturgeon with the greatest care, offering products of great finesse.
A gourmet and immersive experience in Les Eyzies-de-Tayac
In the heart of Périgord Noir, Caviar Perle Noire opens its doors for a gourmet and unusual visit.
Explore fish farming and discover the method of breeding sturgeons, these prehistoric fish more than 250 million years old. Let yourself be introduced to ancestral caviar production techniques and immerse yourself in its little-known but fascinating history.

- La Découverte (20€/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout roe, creamy trout, creamy sturgeon, caviar butter, 1 caviar , all accompanied by a glass of sparkling wine .
- The Initiation (35€/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout roe, creamy trout, creamy sturgeon, caviar butter, 2 caviars , all accompanied by a glass of wine sparkling.
- La Connaisseur (80€/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout roe, creamy trout, creamy sturgeon, caviar butter, 4 caviars , all accompanied by a glass of sparkling wine and a shot of vodka distilled in Périgord.
Useful information
Guided tours lasting 1h30 are available from April 9 to October 31, 2024, Tuesday to Friday, at 10:00 a.m. and 2:30 p.m. by reservation required at 07 89 00 15 17 and/or emilie.caviarperlenoire@gmail.com. Children under 12 years old benefit from free visits (excluding tasting), under the responsibility of their parents.
For an optimal experience, remember to equip yourself with good shoes, an umbrella in case of rain, a hat and a bottle of water in hot weather. Caviar Perle Noire invites you to live a unique gastronomic experience in the heart of Périgord Noir, between tradition and refinement.
