BLACK PEARL CAVIAR: A GOURMET AND IMMERSIVE EXPERIENCE AT EYZIES DE TAYAC
Founded in 1997, Caviar Perle Noire is a key player in the production of caviar and trout eggs in Nouvelle-Aquitaine, precisely in the picturesque Périgord Noir. Nestled near the Caves of Combarelles, the Château de Commarque and the Château de Puymartin, our aquaculture farm enjoys optimal breeding conditions, in the heart of a region rich in history and flavors.
The breeding of Black Pearl Caviar located in a Natura 2000 area is fed by the Beune stream, which comes from a spring. Our sturgeons, Acipenser baerii and Acipencer Gueldenstaedtiii, develop under optimal conditions, reaching maturity around 10 years.
Caviar production at Caviar Perle Noire is a delicate process. Carefully extracted eggs are carefully sorted according to size, colour and firmness. Following a strict protocol, the eggs are sifted, washed, lightly salted and then packaged in traditional "Malossol" boxes of 1 or 1.8kg. These boxes are then kept in a cold room at -2°C, for a refining supervised by Anthony, Master Refiner. After this meticulous process, the caviar is packaged in small boxes of different grammages, ready to be tasted by connoisseurs.

Explore fish farming and learn about the method of raising sturgeon, these prehistoric fish that are over 250 million years old. Let yourself be introduced to the ancestral techniques of caviar production and immerse yourself in its unknown but fascinating history.
VISIT AND TASTING PACKAGES :
- The Discovery (20€/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout eggs, creamy trout, creamy sturgeon, caviar butter, 1 caviar, all accompanied by a glass of sparkling wine.
- The Initiation (35€/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout eggs, creamy trout, creamy sturgeon, caviar butter, 2 caviars, all accompanied by a glass of sparkling wine.
- La Connaisseur (80€/person visit & tasting): tasting of smoked trout, smoked sturgeon, trout eggs, creamy trout, creamy sturgeon, caviar butter, 4 caviars, all accompanied by a glass of sparkling wine and a shot of vodka distilled in Périgord.
PRATICAL INFORMATION :
Guided tours only (French and English) lasting 1h30 are available from 22rd April to 26th September 2025, from Tuesday to Friday, at 10:00 a.m. and 2:30 p.m. by reservation required at 07 89 00 15 17 and/or emilie.caviarperlenoire@gmail.com. Children under 12 years old benefit from free visits (excluding tasting), under the responsibility of their parents.
For an optimal experience , remember to bring good shoes, an umbrella in case of rain, a hat and a bottle of water in hot weather.
