    • Our family and artisanal business, which will celebrate its 65th anniversary in 2025, was created by Jeanne Grolière, from an ancestral family of renowned cooks, and her husband.

      It all started in 1960

      In 1960, Jeanne Grolière decided to start making family preserves and Périgourdines. Having few means, she cooked her recipes inherited from her parents and grandparents in her own ovens and went to the market every week to sell her few products. This is how she built up a customer file and seeing sales increase, she invested, with the help of her husband, in a small canning laboratory, within their own house.


      As the years go by

      As production increased, she decided in 1980 to create a new, larger and mechanized factory in order to cope with the expansion of her sales thanks to word of mouth that had honored the quality of her products for several years. Initially, she was joined by her eldest son Jean-Marc, who had just graduated from her hotel school. Together, they experienced the expansion of the company on a commercial level and began to develop sales at trade fairs and by mail order. Jean-Marc then took charge of production and gradually modernized the manufacturing tools. Over the years, our company has continued to develop and acquire a reputation for reliability and quality.

      Jeanne Grolière's second son, Jacques , joined the company a few years ago. Jeanne Grolière died in September 2008 at the age of 76.

      Today

      The company is run by his two sons Jean-Marc and Jacques.

      Our business:

      Our profession is above all a passion, that of the haute Périgourdine gastronomy, offered to the greatest number and with respect for authentic flavors . We are sculptors of flavors.

      We are Artisans

      Indeed, we are above all artisans because respect for tradition, authentic flavors and quality has always been our priority and it is thanks to these requirements that we can, today, display our awards received each year and this history of which we are so proud.

      Although more mechanized, our work is above all that of a small team , accustomed to working with respect for craftsmanship, the desire to do well and know-how : knowing, for example, how to master the cooking of our preserves and semi-cooked foie gras to guarantee their perfect consistency after cooking and develop their flavors, or even reducing our Périgueux Sauce for a long time and with skill.

      Our recipes are made without colorants or preservatives. We work exclusively with raw materials from our region and defend labels such as "Canard à Foie Gras du Sud-Ouest" or "Oies du Périgord". For us, the traceability and quality of our foie gras are a constant concern. It is always in this spirit of perfection that we seek to regularly create innovative, original and delicate recipes such as our foie gras crème brûlée, our duck foie gras with Guérande salt lacquered with Pineau des Charentes or our figs stuffed with duck foie gras and Pineau.


      Our culture is tradition, our challenge is innovation.

      We are Conservators

      This word seems, at first glance, to be in contradiction with that of artisan because it resonates deep within us, an organization of assembly line work, a production of preserves like those done in large production factories.


      In our profession, the term "Conserver" is fully integrated into our respect for craftsmanship because it allows us to manufacture, in particular, Duck Liver Mousses, Duck and Goose Confits, Enchauds, Chicken Roasts, or our famous and very original Duck Foie Gras Crème Brûlée, in the best conditions of hygiene and conservation of quality products , from our land and our gastronomic tradition. We are also proud to offer you the true flavors of our region with our Périgord Truffles, the Ceps from our undergrowth or even Girolles and Chestnuts from the Périgord Noir where our town of Le Bugue is located.

      We also offer you a selection of the best Caviars from Aquitaine and Périgord from Maisons Sturia and Perle Noire.

      We have 4 shops in Périgord

      1 in Sarlat, 2 in Le Bugue and 1 in Les Eyzies de Tayac. You can taste our products for free. We also welcome you to our factory in Le Bugue where we offer a tour, a video about our company and our profession and a free tasting (open on Saturdays also in July and August). You can also discover our geese.

    Back in Dordogne we shopped again at Groliere Le Bugue....and took orders for friends... Tasting before deciding, advice! Very pleasant and professional welcome. We highly recommend!! Very good products!

    Too disappointed. I bought a block of foie gras yesterday thinking it was going to be really good. Well no! Common foam with no real taste! Given the sale price I expected to eat quality foie gras! The same taste as the one in the supermarket!

    Good explanations without pushing you to buy. Very kind lady. However be careful because we took two duck breasts stuffed with foie gras displayed at 15 euros whereas we were charged 18 for them.... Luckily the little lady had "offered" us a pot of rillettes 🙄
