It was there, in a French patisserie called La Renaissance, that Angel honed his skills. Back in his native Dordogne, he made his dream come true at the age of 23 by opening the Capélo restaurant. The name, which resonates like a family heirloom, is the affectionate nickname of Angel’s grandfather, a passionate duck farmer.
