RESTAURANT CAPELO IN PÉRIGUEUX: A GASTRONOMIC IMMERSION IN THE SOUL OF PÉRIGOURDINE

A gastronomic journey of initiation

After perfecting his art at Le Vieux Logis in Trémolat and gaining valuable experience at Le Centenaire in Les Eyzies, Angel Morales chose Australia to broaden his culinary horizons. It was there, at a French patisserie called La Renaissance, that Angel honed his skills. Back in his native Dordogne, he made his dream come true at the age of 23 by opening the restaurant Capélo. The name, which sounds like a family heirloom, is the affectionate nickname of Angel's grandfather, a passionate duck breeder.

The Chef, heir to a lineage dedicated to rearing this noble bird, adds a personal touch to each culinary creation, combining tradition and innovation.  The quest for culinary perfection involves the meticulous selection of quality local ingredients. The menu, a veritable showcase for the Chef's art, changes every three months to offer an ever-changing experience and to reflect the seasonal nature of the produce. Indeed, the freshness of ingredients is a priority: carefully selected from local producers to guarantee the authenticity of each dish. The chef also prepares a weekly menu featuring emblematic French dishes. The menu changes every Friday. Every visit is an opportunity to discover today's bistronomic cuisine.
