A story of family and passion for good taste

In the 1960s, Jeanne Grolière was a Périgordine, from a family of farmers. They love to cook good things and one day, the idea of selling ducks, cut to pieces, in the market near Le Bugue, germinates in his mischievous mind! It's a good idea, at the end of the morning everything is sold! She starts again the next time, then another time and with her cooking skills and her little “ Moulinex ”, she busies herself in her kitchen preparing preserves, according to family recipes. It is a success! In addition to her supplies from local producers and in order to be able to offer a variety of things to her customers, Jeanne also leaves for the Landes, to roam the fat markets and bring back ducks. It works in this way, constituting a large clientele of individuals but also of professionals, for ten years.

The secret of a good foie gras is the quality of the raw materials!

In 1971, one of his buyers, who ran a cannery, retired and offered him her precious client file… A new adventure began for the Grolière family! They equip themselves and build a professional laboratory next to the family home. To sell their production and make their products known beyond local sales, they hold fairs and shows. They run up to 40 stands per year and in the last 20 years they have received more than 47 medals from national and regional competitions! In 1980 Jean-Marc Grolière, the eldest son who followed a course in the hotel industry, joined the family adventure, to organize production, purchases and develop recipes. A few years later, Jacques Grolière, his brother, arrived to manage the commercial part. It was only in 2003 that Jeanne left the management of the company to pass the baton entirely to this new generation. The family business Foie Gras Grolière now has 10 full-time employees, to supply 4 shops (La Fabrique, the Bugue, Sarlat and Les Eyzies shop) and meet the ever-increasing demand for sales on Internet!

Online sale of Périgord foie gras...

It was long before the fairly recent explosion over the past 5 years in the online sale of artisanal food products that Jean-Marc Grolière understood the web's interest in his foie gras and preserves. It must be said that his mother Jeanne, was already used to mail order sales and all the logistics that it requires. In 2005, when Foie Gras Grolière launched its online store, everything was fine! The difference with the catalogs of yesteryear is the possibility of being well referenced on the Internet and accessible to buyers who do not know the Périgordines shops. It is also the advantage, for travelers who discover these gastronomic wonders on site, to be able to order and receive them at home (by Chronofresh, we can even ship fresh!), All year round!

Make your choice on the online site and receive quickly and in a nice packaging, authentic products from Périgord

It is the smiling Sophie Grolière, the wife of Jean-Marc, who takes care of the website and the orders. She sees an increase of 20 to 30% per year, that's encouraging! She also notices that many customers take the trouble to call, to get advice on how to adapt the products, to have recipe ideas and information on certain compositions. Customers are happy to have a (nice!) Person on the phone to answer them and help them place their order. Some are not used to or are reluctant to sell online, this user-friendliness helps them to pass the course!

Modern recipes that flirt with traditions

Each year, Jean-Marc Grolière and his team develop 1 to 2 new recipes. This is an opportunity to try new combinations of tastes, to renew themselves to offer original flavors to their regulars! Recently, he concocted fig, stuffed with foie gras and marinated in Pineau des Charentes… Also a specialty of foie gras , cooked in Guérande salt (without heating) covered with a thin layer of pineau jelly. But also a delicacy of semi-cooked foie gras, studded with melting pieces of duck confit. Or a crème brûlée of foie gras , to pass under the grill and to taste with a teaspoon, in a very very tasty way...

Taste a specialty of Périgord: l'Enchaud, roast pork confit. Périgueux sauce is also a gourmet and tasty specialty!

There is not only duck on the shelves of Foie Gras Grolière (and not only foie gras for that matter!). There are also goose specialties (both ducks and geese are offered under the IGP Périgord label). Goose Foie Gras is often perceived as more bland, yet it is not! It is a product that is tasted and cooked differently, goose foie gras is firmer and holds up well, it lends itself to different uses than duck. Those who have a prior knowledge of goose-based products are often surprised and the taste buds in turmoil after a visit to Foie Gras Grolière.

There are pâtés, terrines, mousses, rillettes, sauces and specialties such as jam or chutney. Preserves or jars of recipes prepared as at home: confit (goose, duck or hen!), Gizzards, muff, neck, cassoulet, enchaud (a Périgordine specialty) and regional grocery products fine, such as vinegar or oils, flavored salts… And of course the local aperitifs (with walnuts or chestnuts among others), Bergerac Duras wines and everything you need to compose gift baskets. They are popular during the holidays, but also during the holidays, because it is a perfect gift, which always pleases lovers of good food.

Grolière foies gras are the assurance of irreproachable taste, resulting, as you have understood, from a long family tradition. Buying Périgord foie gras is easy thanks to the website, wherever you are! However, do not hesitate to push the door of one of the 4 shops , during your visit in Périgord.
