Of course, duck remains the local star, served as foie gras, confit, magret or terrine, as well as goose with its fine, delicious foie gras. Les pommes de terre sarladaises à la graisse d'oie (Sarlat potatoes in goose fat) is a speciality you can find on the markets, to eat in or take away. Continue your tour and spot the ceps and truffles of Périgord, harvested at very special times of the year. Some of the region's festivities are associated with them, making for great gourmet and convivial moments. As for dried fruits, chestnuts, hazelnuts and walnuts are perfect ingredients for sweet and savoury recipes, or for pastries such as the speciality walnut cake. Is summer here ?
